Fresh Green Herb Salad

This is a light and healthy salad you can make with herbs and greens grown in your indoor garden. It takes just a few minutes to prepare.
Ingredients
- 1 cup lettuce leaves (any type)
- 1/2 cup baby spinach
- 1/4 cup fresh basil leaves
- 2 tablespoons chopped parsley
- 1 tablespoon chopped mint (optional)
- 1 tablespoon olive oil
- 1 teaspoon lemon juice or apple cider vinegar
- Salt and pepper to taste
Instructions
- Wash all the greens and herbs gently under cold water.
- Dry them with a clean towel or salad spinner.
- Tear the lettuce and spinach into bite-sized pieces and place in a bowl.
- Add chopped parsley, basil, and mint.
- In a small cup, mix olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the greens and mix gently.
- Serve immediately as a side dish or light meal.
Tips
- You can add cherry tomatoes or sliced cucumbers if you grow them indoors too.
- For extra flavor, sprinkle some seeds (like sunflower or pumpkin) on top.
- Use fresh herbs for the best taste.
