Fresh Green Herb Salad

This is a light and healthy salad you can make with herbs and greens grown in your indoor garden. It takes just a few minutes to prepare.

Ingredients

  • 1 cup lettuce leaves (any type)
  • 1/2 cup baby spinach
  • 1/4 cup fresh basil leaves
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped mint (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice or apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Wash all the greens and herbs gently under cold water.
  2. Dry them with a clean towel or salad spinner.
  3. Tear the lettuce and spinach into bite-sized pieces and place in a bowl.
  4. Add chopped parsley, basil, and mint.
  5. In a small cup, mix olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the greens and mix gently.
  7. Serve immediately as a side dish or light meal.

Tips

  • You can add cherry tomatoes or sliced cucumbers if you grow them indoors too.
  • For extra flavor, sprinkle some seeds (like sunflower or pumpkin) on top.
  • Use fresh herbs for the best taste.
